Chef Greg back once again, sorry for the hiatus, I Chef Greg back once again, sorry for the hiatus, I've been creating an exciting, seasonal reopening menu for you all! (Which I'll be finalising and posting here next week!)

It may contain some of this tender, sweet and beautiful forced rhubarb. Normally it would be close to end of season but I can't stand to spend another year with out it and so we're using some tricks to preserve that beautiful, unique rhubarb flavour for as long as possible! See you in 16 days!

One year ago we had to close and although it was "for the foreseeable future” nobody expected it would last for so long.

Lot of people have been badly impacted of course on a personal level and our thoughts are with all our friends who had to endure sickness and losses of loved ones. 

Independent businesses like us have been suffering a lot and the struggle although only material is real.

The whole Hospitality industry obviously is badly hit and as a young business we were no exception. 
The William IV has been a landmark in the area for centuries and known by most local residents but bringing it back to life and up to current standard did take some time and effort.

2020 was full of promises, we were just finding our feet and getting ready to spread our wings and welcome customers in the garden for the spring.

Instead of welcoming customers we delivered them wine boxes, provided “emergency" Negroni and spritz, helped with gift for neighbours, cooked roasts to take away, fired the barbecue up, became covid compliant and closed again. 

We also got to know our neighbours better and have been moved by the support received by @parlouruk @chine.kensalrise @pichicafe @lechouxlondon @kensalqueenspark and so many others.

The time and energy invested has not been wasted and we are very much looking forward welcoming you all from 12th April in our garden. (17th of may in the pub).

I'm going to start posting photos every week, just showing off some of the super seasonal veg we'll have on the menu when we reopen.

This beautiful, geometric vegetable is Romanesco broccoli! It's full of vitamins, fibre and maths. Fractal geometry, fibonacci numbers, it's a mathematical marvel and a taste sensation. If you can get your hands on some, it's an absolute treat and a great way to brighten up a plate. The spring crop is just coming into peak seasonality now and you can expect to see it in our taco selection when we reopen next month! 36 DAYS!!!

Chef Greg back again! The end is nigh, and we're Chef Greg back again!

The end is nigh, and we're all ready for it! We've got some great plans for the outdoor menu, and couldn't be more excited for all of your feedback. It's already felt like a long year and somehow it's not even March yet, but we at the William couldn't be more pumped to invite you back into our establishment (even if it's just in the garden!) This is going to be a vital time for us to get back to a running start, so if you love good food, good drinks, and good times, we'd love to see you!

Taken the last week off the Instagram to focus on some menu creation for our upcoming return! But had to share this absolute cracker of a dish, it's a beetroot and cumin purée, steamed trout with crispy skin, romanesco broccoli, and asparagus. I'll be posting a few times a week from now on with a real focus on seasonal ingredients, and giving you all some simple, delicious recipes to make them shine! See you all soon!

Tucked away in the small village of Saint-Bris bet Tucked away in the small village of Saint-Bris between Chablis and Auxerre, Domaine Goisot really deserves to be better known. 

The Goisot estate has worked organically since 1993 and is nowadays certified biodynamic by Demeter. 
Goisot’s old wine Aligoté is from parcels of 40 to 92 years old! Planted on the high, cool slopes of St Bris. The Goisot Family are known to be one of the top producers in St. Bris. The family can trace its roots in the region back to the 14th century. Winemaker Guilhem Goisot, who has taken the reins from his father Jean-Hugues, has been the driving force in converting all the vineyards to organic and biodynamic viticulture. Good farming practices are important in general, and when a wine is produced like this - without a ton of human intervention, we feel like you can better judge the wine’s sense of place. Harvesting ripe fruit results in a far more textured, high quality, pulpy and sexy wine than you might usually associate to this variety ! Packed with ripe pear, white flowers and a round nutty finish.

Chef Greg back with your Sunday salivation session Chef Greg back with your Sunday salivation session!

I know there's a lot of uncertainty about when we'll be back and in what capacity we'll return, but one thing's for certain; everyone at the William's excited to get back to brightening up your days! Until then though, here's the recipe for the marinade we use for one of your favourite menu items, our bife ana steak sandwich!

This recipe is for around 3 or 4 steaks so get your flatmates or family involved and blow them away. Chop half an onion, 4 garlic cloves and a chilli, combine with 2 bay leaves, 2tsp oreganoand 1tbsp ground black pepper. Add half a glass of red wine and 250ml of olive oil to this mix and stir it well. Pour this over your steaks and massage it into the meat, leave in a container and refrigerate overnight. When you're ready to eat just season the steak then cook as you normally would! Easy.

At the William we serve the sandwich with a compound horseradish and pink peppercorn butter, and Lyonnaise onions, if you fancy giving those a go, shoot me a message and I'll give you the recipe!

Chef Greg here! Today I’m serving up one of my a Chef Greg here! Today I’m serving up one of my absolute favourites to cook at home - delicious, vegan, gluten-free gnocchi that is super easy to make and can be frozen for up to a month!

Peel, chop, and boil 500g of large white potatoes, then mash until smooth. Add 250g of buckwheat flour and 1tbsp of extra virgin olive oil to mash, then mix together with your hands until it forms a dough. Roll out the dough into a thin line and cut that into around 1cm pieces. Drop them into salted boiling water and remove once the gnocchi starts floating (around 2-3 minutes). And that’s it!

You can freeze them or add them right away to whatever pasta sauce you fancy! Here I’ve made some fresh ricotta, a wild garlic oil, and a Romesco sauce (Italian red pepper and almond), then garnished with some wild garlic flowers. I also love to add some flavourings to the gnocchi, here I’ve gone for some chopped sun-dried tomatoes, but you can add herbs or anything you want! Just chop them up and add them to the mix before you roll it out. Feel free to DM me for any more recipes!

Having a varied and healthy diet is vital to staying happy and positive, now more than ever with gyms shut and amateur sport on hold. It’s hard to feel motivated at the moment, but we all need to remember that the current state of affairs isn’t the new normal, rather a stop gap in our lives. This dish is my Wintery take on Panzanella, a rustic, Italian salad. It uses beautiful winter tomatoes that are all entering peak seasonality in the next month, wild garlic that is growing untamed across the UK at the moment (and that I’m lucky enough to have sprouting all over my back garden), any old bread you might have lying around (although a sourdough or ciabatta works best), and classic salad dressing ingredients, a nice extra virgin olive oil, some aged vinegar, shallots and capers. Feel free to message me for the exact recipe if you want to give it a go!

Chef Greg back again! I know that pretty much eve Chef Greg back again!

I know that pretty much everyone has been economically hurt by COVID-19 and it's subsequent lockdowns, but for a lot of farmers and foragers who specialise in slightly more unusual or unique produce, it has meant their entire stream of income has been cut off. Unfortunately it's the restaurants and pubs that have been shut for the better part of the last year who serve as their sole customers, and I'm sure we're missing them as much as they're missing us. Winter and Spring are probably the most exciting seasons for chefs, and it looks like we'll have another year without the excitement and happiness the food produced in these seasons can bring. In trying to capture some of that spirit I hope some of you will try to do at least some shopping at local independent food suppliers in the coming months and have some fun with wild ingredients! Much like this port and wild garlic braised octopus with fennel and chives!
